Livornese style Cod is a traditional Tuscan fish dish simple and really tasty, and above all it can be prepared in literally 15 minutes. This recipe is for 1 person only, all you have to do is multiply the ingredients by the number of people you are cooking for.

Ingredients:
- 250 g boneless cod fillets
- 100 g of tomato sauce
- 1 tablespoon of black olives (pitted and sliced)
- 2 teaspoons desalted capers
- less than half a glass of dry white wine
- ½ clove of minced garlic
- a little chopped parsley
- 2 tablespoons extra virgin olive oil
- salt

Method:
In a pan, heat the extra virgin olive oil.
Add the garlic, brown it, then add the cod fillets and cook for 3/4 minutes over low heat.
Add the desalted capers, black olives and a bit of parsley. If you prefer a different taste, you can use oregano, fresh or dry, or thyme.
When the fish is cooked on the bottom, turn it over gently and deglaze with the white wine.
When the wine has evaporated, add the tomato and cook for a few more minutes, seasoning with salt. Instead of tomato puree you can use rustic pulp or cherry tomatoes or coarsely chopped peeled tomatoes, it depends on your taste and what you have in the pantry.
Complete your dish with a seasonal mixed salad, boiled potatoes or simply toasted bread.
